THE BORING STUFF
Machine harvested in the cool of the night, crushed and then fermented in stainless steel at cool temperatures. Light pressings are included in the ferment for additional character and mouthfeel. The residual sugar is achieved through a combination of stopping the ferment early and adjusting slightly prior to bottling to achieve the perfect harmony of sugar and acidity.
